Flourless Orange, Ginger and Almond Cake


Ingredients:
2 large oranges, washed.
6 eggs beaten.
250g. ground almonds.
250g. sugar.
1 tsp. baking powder.
a thumb of-sized knob of fresh ginger.
1/4 cup of candied or crystallized ginger


Boil oranges in a little water in a covered saucepan for 2 hrs. Allow to cool, then cut open, remover pips and chop roughly.
Preheat oven to a moderate and grease flour in a springform tin. Blend oranges and remaining ingredients thoroughly in a food processor.
Pour batter into prepared tin and bake for 1 hour. If cake is still very wet, cook a little longer.

Happy trying! The cake is moist and dense.

  1. I have been wanting to try this recipe, but never got the chance to. Looks very moist and sedap. If you don't mind,Can I have your yogurt raisin bread? Plan to bake for my father when he comes for a visit nanti. He loves anythign with raisin.
