Yogurt Raisin Bread


Ingredients:
300g. bread flour
100g. multi purpose flour
20g. powdered milk

75. castor sugar
8gm. yeast
1 egg, light beat
50g yogurt
150 ml cold water.
75g margarine
1 tsp salt
50 g. raisins, cut into half soak, and then drain on paper towel

Mix everthing in food processor or mixer, blend until everything mixed.
let it rest for one hour and when it rise double in size, give it a nice punch.
Put aside aside again for about an hour. Shape it into whatever shape you
want. Brush the dough with egg yolk mix with some milk. Bake in a hot oven 220c for 25 mins.

Flourless Orange, Ginger and Almond Cake


Ingredients:
2 large oranges, washed.
6 eggs beaten.
250g. ground almonds.
250g. sugar.
1 tsp. baking powder.
a thumb of-sized knob of fresh ginger.
1/4 cup of candied or crystallized ginger


Boil oranges in a little water in a covered saucepan for 2 hrs. Allow to cool, then cut open, remover pips and chop roughly.
Preheat oven to a moderate and grease flour in a springform tin. Blend oranges and remaining ingredients thoroughly in a food processor.
Pour batter into prepared tin and bake for 1 hour. If cake is still very wet, cook a little longer.

Happy trying! The cake is moist and dense.

Hummingbird Cake



A delectable American favourite, this moist cake is probably named after the brilliant tiny American hummingbirds, whose staple diet is nectar.

Keep cake in the refrigerator if weather is wet or humid.

1 1/2 cups plain flour
1 cup castor sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon bicarbonate of soda
3 eggs, lightly beaten
3/4 cup oil
3/4 cup chopped pecans or walnuts
2 cups mashed over-riped bananas
1/2 cup undrained crushed pineapple in heavy syrup

CREAM CHEESE FROSTING
60g packaged cream cheese, softened
30g butter
1 teaspoon vanilla essence
1 1/2 cups icing sugar

Lightly grease 23cm square slab pan, line base with paper, grease paper.
Sift flour, sugar, cinnamon and soda into large bowl. Stir in eggs oil, nuts, banana and pineapple, stir until just combined. Pour mixture into prepared pan. Bake in moderate oven about 1 hour. Stand cake 10 minutes before turning onto wire rack to cool. Spread cold cake with cream cheese frosting.

Cream cheese Frosting: Beat creamcheese, butter and essence in small bowl with electric mixer until light and fluffy, gradually beat in sifted icing sugar.

Orange & Blueberry Cake




Serves 8-10
Prep time 25 mins
Cooking time 50 mins
Cooling time 10 mins

2 cups (300g) self raising flour, sifted
1 1/3 cups (295g) castor sugar
2 eggs, lightly beaten
3/4 cup (180ml) millk
rind and juice of 1 orange
130g butter, melted
200g blueberries ( i got it from tin in heavy syrup, drained it and take only the fruits)

1) preheat oven to 180 C. Grease a deep 21cm loose-based, round flan pan.
2)Combine flour and sugar in a large bowl. Add eggs, milk, rind, juice and butter. Mix
until combined. Spoon into prepared pan.
3) Top with half of blueberries. Bake for 20 mins. Sprinkle over remaining blueberries
and bake for another 30 minutes. Cool in pan for 10 minutes, then transfer to a wire
rack to cool completely.

Sauce
1 1/2 tblespoon of Cornflour
sugar approximately 1 tablespoon
Heat it in saucepan until it thicken. Let it cool, then pour on cake when served.

Easy peasy... this is a very quick to prepare Cake especially when you have guest coming (short notice) for Tea.

Chocolate Oreo Cake




Cake Ingredients
180g butter
1 3/4 cups castor sugar
3 eggs
1 1/2 cups self-raising flour
1/2 cup plain flour
1/2 teaspoon bicarbonate of soda
2/3 cup cocoa
3 teaspoons dry instant coffee
1/2 teaspoons red food colouring
1/2 cup water
1/s cup milk

Rich chocolate Frosting
60g dark chocolate
1 1/4 tblespoons cornflour
4 tblspoons cocoa
4 tblespoons sugar
a pinch of salt.
1 teaspoon butter
1 cup hot water.

Grease 2 deep 20cm, round cake pans, line bases with paper, grease paper. Beat
butter and sugar in small bowl with electric mixer until light and fluffy, add eggs,
1 at a time, beating well between additions.
Transfer mixture to large bowl, fold i sifted flours soda and cocoa with combined
coffee, colouring, water and milk, in 2 batches. Pour into prepared pans, bake in
in moderate oven about 45 minutes. Turn cakes onto wire rack to cook.
Join cold cakes with whipped or mock cream, top with rich chocolate frosting.
Rich chocolate Frosting
combine flour, sugar, salt, cocoa powder, vanilla essence and hot water in a pan and heat until boiling. Remove from heat, then add Chocolate and butter. Stir until smooth. Cool at room temperature until spreadable, stir occasionally while cooling.
Oreo Filling
Crush 1 packet of Oreo and spread it on top of the cream *chocolate frosting* as when you layered the cake.

This is my Children's Favorite Chocolate Cake..The cake is moist and spongy,
this cake you can layered it with any Cream and fruits, like bananas if you like.
